Questions

Why crush it between my palms?

Rubbing breaks the seed skin and wakes the aroma, so a small amount flavours the whole dish.

Is it the same as cumin?

No. Ajwain looks similar but tastes sharp and thyme-like. Cumin is earthy and warm.

Can I dry-roast it?

Briefly. It burns quickly and turns bitter.

How long will it keep?

The best-before date is printed on the jar. Keep the lid closed, in a cool, dry place away from sunlight and heat.

What is ajwain called in English?

Carom seeds. The botanical name is Trachyspermum ammi. In Tamil it is called omam.
