Questions

Is this the same as cassia?

No. Ceylon is Cinnamomum verum: thin, pale, many-layered quills with a mild, sweet taste. Cassia is thicker, darker bark with a stronger, spicier flavour. We sell both and name each one.

What does H1 mean?

It is a size grade in the Hamburg classification, based on quill diameter. H1 quills are 16 to 23 mm across.

Can I grind it at home?

Yes. Break a quill into pieces and grind it in a spice grinder. The thin layers grind easily.

How long will it keep?

The best-before date is printed on the jar. Keep the lid closed, in a cool, dry place away from sunlight and heat.

Is Ceylon cinnamon the same as dalchini?

In India, dalchini is used for both Ceylon cinnamon and cassia. This jar is Ceylon (true) cinnamon from Sri Lanka. Our cassia is sold separately and named as cassia.
